
BODY TONING TACO SALAD
This taco "meat" looks just like ground beef, and it's hormone free! Just like the cheese sauce! A taco salad designed for the body! A "meat" full of fiber and a hormone free cheese sauce full of joint strengthening copper!
Equipment
- 1 stove pot
- 1 BLENDER
Ingredients
LENTIL TACO MEAT
- 1 cup BROWN LENTILS
- ¼ RED ONION Diced small
- 2 tbsp TOMATO PASTE
- 1 tbsp TACO SPICE BLEND Homemade preferred
- 1 tbsp EXTRA VIRGIN OLIVE OIL
CASHEW CHEESE SAUCE
- 1 cup RAW CASHEWS
- 2 tbsp NUTRITIONAL YEAST
- 1 tsp TURMERIC POWDER
- 1 tbsp LEMON JUICE
- ¼ tsp TURMERIC POWDER
- ¼ tsp DRY MUSTARD SEED or POWDER
- 1 tsp SEA SALT
- ¼ tsp PEPPER
GUACAMOLE
- 1 AVOCADO
- 1 tbsp LEMON or LIME JUICE
- 2 tbsp CILANTRO LEAVES
- 1 BIBB LETTUCE
Instructions
LENTIL TACO MEAT
- In stove pot, add:
- BROWN LENTILS and enough WATER to cover them plus 1"
- Bring to boil, then turn down to simmer and put the lid on pot.
- Add RED ONION
- Cook until lentils are soft. You want to be able to mash them up with a fork. It will take 20-30 minutes.
- Place in bowl and add: TOMATO PASTE, TACO SPICE BLEND, EXTRA VIRGIN OLIVE OIL
- Combine all ingredients and mash with fork leaving some lentils whole for texture. Taste and add salt to taste.
CASHEW CHEESE SAUCE
- Blend till smooth all ingredients plus ¾ cup WATER. If needed, add 1 tbsp more of water till you have a thick, smooth sauce.
GUACAMOLE
- In small bowl, mash together with fork all ingredients.
