ALL THE FLAVORS OF THANKSGIVING PIES WITHOUT ALL THE NASTY!
These bars are major! A whipped creme filling between a firm nutty crust and juicy fruit topping! Being all kinds of sweetness you want from only fruits and the coconut creme! Plus all the layers are full of fiber!
Yes I did not add one pinch of sugar to these! Which is crazy to think the cherry ones were almost too sweet for me! But when you cook down fruit their sugar concentrates making them sweeter!
The idea of the design behind this one was still with Thanksgiving in mind. I was on to a dessert and I thought wouldn't it be great to mash up a few different pies and this is what I came up with! No baking or flour required!
I made pumpkin puree from Pie Pumpkin, which is only a matter of roasting and pureeing the pumpkin. They are widely available now even at small local groceries so ask your produce man for the directions to them as mine were hidden in a cart.
If test driving, my suggestion would be to start with making the apple pie filling. Making pie fillings are really not difficult at all! If you don't have ceylon cinnamon, just use regular. Make the filling to get your feet wet, get your confidence up and have an idea in mind of the taste. A lot of times this is how I start with a dish. I figure out how to make an element and let it inspire me to create a dish as I did with this one!
