In order to be successful at meal prepping, just like most missions in life, you need a strategy! One that works! 
I had an everchanging meal service menu at Pump Cafe with limited space and equipment. I needed efficiency! One strategy I started implementing for menu planning was to assign days a specific foundation (noodles, rice, greens, etc) to help guide me, which limited guess work and ensured I was providing variety to my customers. Days were given their foundation based on common eating and fitness patterns to provide the right nutrients at the right time. Considering it worked for providing hundreds of weekly meals with major dietary and equipment constraints I believe it can work for you! 
Try this strategy for a month or do a switch up on days to make it more compatible to your work, fitness, and home schedule!
