Sometimes all it takes is adding a broth to a dish to turn it into a soup!
For realzy it is that easy! Example, I turned the Roasted Root Vegetable Salad into a soup simply by adding vegetable broth! I also added quinoa for some protein since I was going to be eating this as a meal not a side dish.
Heated up veggie broth...added the cooked vegetables...done.
I enjoyed some everyday at work all week!
Even if you omitted the Caramelized Onion Sauce and Pumpkin Croutons it will still be good!
