I love creating healthier versions of traditional sauces and condiments. One of my personal favorite transformations is my mayo makeover.
I use to love me some Hellman's growing up. I would have a ham and mayo sandwich (on a roll only) everyday for lunch from 1st grade to 12th grade. Sometimes I would get lucky and my mom would throw in a slice of swiss or provolone. Much different than what I eat today. Man I miss those sandwiches...
Store bought mayo is so chemical filled, my 30 something hips can't handle it like my bony teenage body could. So instead, I make one out of macadamia nuts, sunny seeds, EVOO and lemon juice. Texture is slightly different than real mayo, but the taste is close and it's so delicious regardless!
This is a very creamy and filling sauce. Macadamia nuts are high in fat but it's good fat that helps curb your appetite, and their fatty acid palmitoleic acid helps increase fat metabolism! They are also very low in carbs. Only 2 g per half a cup!
Macadamia nuts are a little pricey but you only need 1/2 cup and you can usually find a small bag in the baking section.
I enjoyed it as a sauce with kale, brussels sprouts, green beans and sweet potato fries, but I imagine this would taste good on top of chicken or eggs too or use as a condiment for burgers and sandwiches!
High speed blender
Sunflower seeds, 1/2 cup
Macadamia nuts, 1/2 cup
Extra virgin olive oil, 2 Tbsp
Lemon juice, 2 tsps
Red bell pepper, 1/2, roughly chopped
Cayenne, 1 tsp-2 tsp. Depends on how spicy you want it!
Sea salt, 1-2 tsp
Water, 1/2 cup-3/4 cup
1. Place all ingredients in blender and blend till smooth. First using 1/2 cup water then add until you get a funnel when blending.
*If you do soak your sunflower seeds and macadamia nuts. Do so for 2 hours. Remember when usiing soaked nuts and seeds you won't need to use as much water.
