Dijon Sweet Onion Dressing
This was a throw together dressing for my Pump customers, and has become one of my favorites.
Blender:
1 cup almond milk (best homemade:))
3/4 sweet onion, peeled & roughly chopped
1 Tbsp, Dijon Mustard (organic preferred)
Juice from 1 lemon
5-7 dates (at room temp so they are soft)
1/4 cup EVOO (extra virgin olive oil)
1/4 cup raw cashews
1/2 tsp Mustard Seed (I used but I think you'd be okay without if you don't have)
1/2 tsp turmeric (again optional but adds color & nutrients-plus everyone should have turmeric laying around ;))
sea salt to taste
Blend till smooth
Makes 2.5 cups
Enjoy over iceberg lettuce with tomatoes!
