Raw Vegan Pomegranate Peanut Butter Chocolate Chip Birthday Cake

What a different kind of birthday I had this year!  The schools shut down and around noon our Govenor announced bars/restaurants, movie theaters and gyms would close indefinitely!  Not the gym!  I had just joined a few weeks after a 3 year hiatus and it was becoming a vital part of my morning routine.  Forgot how great my confidence, mood and performance can really be with a strong resistant workout to start the day.  Luckily I was able to start my birthday with one before they shut down!

So any plans I could have made for my birthday were cancelled thanks to the COVID-19.  However my no frills birthdays was a beautiful day thanks to friends and family.   And here I was feeling sorry for myself feeling alone the night before.  No ma'am!! I'm definitely not alone! 

It's been my own tradition for the last 5 or so years to make my own birthday cake, minus one year when my sister-in-law made me an epic garden cake.  

I really enjoy making my own cake, plus I don't like traditional cakes.  Never have.  Not even as a little girl.  But when I gave up gluten and dairy I learned how to make raw vegan cakes!  They look difficult but honestly they aren't at all, as long as you have a good food processor.  I actually think they are easier than normal flour cakes because you don't have to be precise with measurements, you don't have to do the toothpick test, you don't have to worry about it burning or rising!

This is a great cake to make during these times if you have a birthday coming up as it's full of antioxidants to help keep your immune system strong ANDDDD you don't need to use eggs which are as hard to come by now as TP!

This cake is extremely versatile.  You don't have to use pomegranates if you don't have them.  You could use any fruit!  I've also used strawberries, blueberries, raspberries and mango before!  You don't need to make three layers!  You don't even need to make two.  Maybe the first time you want to just try one!  Top off with a chocolate drizzle, whipped coconut creme (to sweeten add maple syrup), fruit and done!  That's how I started! 


Did a little decorating to my apartment.  You have to treat yourself when you live alone and the rest of the world is social distancing!

 Isn't this letter/wood thing cute?  I found it for $2.50 at Marshalls!  It comes with a bunch of plastic letters and numbers to change up the sign!
