HOW IRONIC RIGHT AFTER I COMPLETED MY MEAL PREP SERIES OF VIDEOS FOR JANUARY, I END UP NEEDING THE PREPPED FOOD IN THE WORST WAY!
So I was really able to put my meal prep lessons that I shared in January's videos to the test! Unexpectedly I tested positive for Covid this week and had to immediately stay isolated. I couldn't believe it! I took the test out of due diligence thinking I just had a cold. So confident, my produce bins were practically empty. Thankfully, due to the meal prep videos, I had prepped frozen vegetables and sauces.
Time to get super creative in the kitchen, because it was more important than ever to make sure I was getting nutrients in my diet so I could recovery quickly!
These are two dishes I designed with the avocado sauce I made last week. It stayed fresh and bright green all week! In the very odd, yet delicious dip I made, I also used the grated butternut squash I froze in the meal prep video. I have enjoyed a couple of my frozen mirepoix veggie mixes as well, but those unfortunately were burnt victims and not picture worthy. Not sure if it's from congestion, but I can't seem to smell and I keep burning sh&*!
The irony of this timing is so crazy and just goes to show, it's always a good idea to have food prepped, especially during a pandemic because you will never know what will happen!
BLACK BEAN TACOS
I made flour tortillas with 00 FLOUR, GHEE, and WATER. Spread tortillas with the AVOCADO SAUCE I made in last week's video. It's a simple blend of LIME JUICE, SALT, EVOO and AVOCADOS. Added CILANTRO, MANGO, PICKLED RED ONIONS, BLACK BEANS spiced with CUMIN and SMOKED PAPRIKA, and PICKLED JALAPEÑOS.

EDAMAME AVOCADO BUTTERNUT DIP WITH APPLE CHIPS
Okay, I know this dish doesn't exactly look super sexy. My mind is not up to creative speed, but this was really good! Plus it was perfect for my small bite eating. Since I can't breath as easily it helps to take smaller bites with time in between bites. I used the same AVOCADO SAUCE I used in the black bean tacos and mixed in some FROZEN EDAMAME and FROZEN GRATED BUTTERNUT SQUASH that I had prepped in the freezing video. I also mixed in a lot of RED LEAF LETTUCE to up the vitamin content. Enjoyed with some HOMEMADE APPLE CHIPS that I also keep stored in my freezer.
