I'm a few days shy of not having gone to the grocery store for a full month, so I'm definitely deep into quarantine cooking! Eating a little differently than normal because of it but I'm really enjoying the change. It will be interesting to see the affect it has on my body if any. While I may be eating more starchy grains than normal, the way I see it is I'm still eating clean home cooked meals. So I'm not stressing about it.
I'm still working on all the produce I froze April 10th. I shared how I prepared produce in this video, including the parsley ice cubes I use in this dish.

Something I haven't made a video for and I definitely should is one on homemade spice blends. I think they are a perfect addition to a quarantine kitchen! I used my homemade cajun spice blend for this dish.
PREP MEALS EVEN IF YOU WORK FROM HOME!
This dish makes a great meal prep dish as it packs easily, will stay fresh all week and doesn't need to be heated to enjoy. Even if you're working from home, having premade meals will help you develop a routine and you will get more done during your work day!

Do you find yourself eating differently during this time? Mine comes from a combo of not wanting to go to the store as much and trying to be as frugal as possible due to concerns of what the economic situation will be once this is over, and a 10lb bag of rice is a lot cheaper than a 10lb bag of lettuce! Oh lettuce.....
