Quarantine Easter!
What a unique Easter it will be this year!  I'm not sure yet if I will be spending time with my niece and nephews as I'm still working at an essential business, and I've been trying to keep my distance from them just in case.   If I do fly solo on Easter it won't be my first time as I've spent Easter alone before when I lived in Myrtle Beach and my family was in Maryland.  Plus, given the circumstances I think I just want to be by myself this year.  I'm sure I'll still be enjoying company via FaceTime and enjoying Easter treats! 
Since I'm planning for a party of one this Easter, instead of making carrot cake bread or a cake, I wanted to make something smaller.  Also I've been challenging myself by using as many pantry and frozen goods as possible to fit with the quarantine situation.  Normally my diet is mostly produce, but I'm not trying to go to the store that much especially since Maryland is about to hit its peak! 
These cookies only have 5 ingredients, involve no flour or baking soda and they can be stored in the freezer!  Mine didn't make it that far, but they can definitely be stored for later!
Pantry items used:
GLUTEN FREE OATS
RAISINS
ALMONDS
CEYLON CINNAMON
SALT
BUCKWHEAT GROATS
COCONUT MILK
COCONUT FLAKES
Frozen items used:
FROZEN BANANAS
Fresh produce:
Only CARROTS!  I nailed this challenge!
You gotta make these because they're not only super easy but also nutrient rich which will help you stay healthy through all of this!
