Cranberry Roasted Veggie Kale Salad

 

Another way to enjoy cranberries! Tuesday I shared a way to enjoy cranberries in a pasta dish, now I have a way to enjoy in a salad as a dressing!

We really only see these guys on Thanksgiving but thanks to them being available frozen we can enjoy their beauty and natural form of anti aging resveratrol all year round! 

I kept this dressing tart and added roasted sweet potatoes and butternut squash for natural sweetness to balance it out. 

I've made this dressing both with shallots and caramelized onion.  I do think the shallot version is better, although both are good, but you may have a hard time finding shallots.  Do not buy the shallots that come in the bag!  I don't find them to have much taste at all.
