I saw this idea on "Best Thing I Ever Ate" on Food Network! I love the use of walnuts that are a good source of mind strengthening omega-3 fatty acids! I mean they look like little brains!
Given they don't give actual recipes on the show, this is my twist on the dish.
WALNUT TOPPING
In a cast iron skillet over low medium heat:
Equal parts EXTRA VIRGIN OLIVE OIL and WALNUT OIL. I added a pinch of KOSHER SALT and splash of LEMON JUICE. Mixed everything then I added CHOPPED WALNUTS. Cooked just until the walnuts became fragrant, apx 5 minutes. You just want to toast them.
I added some of the walnut mixture to BIBB LETTUCE and tossed with tongs right away.
QUICK PICKLED RED ONIONS
Slice 1 RED ONION really thin. In a medium sized bowl combine 1/4 cup WHITE VINEGAR, 3/4 cup WARM WATER, 1/2 tbsp PICKLING SALT, and 1 tsp COCONUT SUGAR. Add red onion. Allow to sit in pickling mixture for at least 15 minutes.
GRATED CHEESE
In the show they added some cheeze. Instead I baked some of my tofu/cashew/coconut cheese, froze, then shaved some over salad.
ASSEMBLY
Top BIBB LETTUCE with PICKLED RED ONIONS and WALNUT TOPPING. Shave CHEESE over.
