Kale Sunflower Seed Pesto Quinoa Bowl

Washing your hands is a definite must, but let's keep that inside clean too!
Keeping your immune system strong is one of the best way to fight COVID-19!  
Last night Maryland was given a stay at home order, meaning we basically can't leave our houses except to go to work and to get food.  Although I still work for an essential business and my life has only been slightly disrupted, something about this new order breeds more stress and anxiety.  
In addition, my stress has been compounded by a family loss and I'm fighting with good workouts to release tension now that the gym has closed.  
As a designer of recipes for function, my primary focus now is on boosting the immune system as well as managing stress and anxiety.  They have to be designed with more pantry items than I'm use to since I'm not going to the stores as much to buy fresh produce  They also have to be budget friendly. Although I have a job now, you never know what's going to happen and being self reliant I have to be prepared.  
This dish is 35% pantry, 25% prepared cold items I already had, and 40% fresh produce.  Came together on the fly and it's one of my favorite lunches I've ever made!

KALE SUNFLOWER SEED PESTO: Sunflower seeds are a rich source of Vitamin E! Kale is high in Vitamin C and A, contains isothiocyanates which helps the body detoxify and they contain the ideal balance of Omega 3s and 6s, promoting anti inflammation! 
QUINOA: Fiber in quinoa helps produce butyrate which helps improve gut function and suppress inflammation! 
POMEGRANATES:Contains powerful antioxidants called punicalagins!
GOGI BERRIES: High in Vitamin A! Also iron to keep your energy levels up!
CHIPOTLE SWEET POTATOES: Also very high in Vitamin A! 
CILANTRO ASPARAGUS SLAW: Cilantro contains antioxidant quercetin! Also has natural sedative properties helping to reduce our anxiety! 
PICKLED ASPARAGUS: Raw asparagus is a form of prebiotics which helps boost gut function! The better our guts are functioning the better the chance we have at fighting off inflammation!
