I can't believe how much this tastes like Maryland "crab" soup! The trick is lots of spice! In particular, the born and raised in Maryland spice...Old Bay! I listed amounts in the recipe but don't be afraid to go heavy handed!
Almost all this soup's ingredients were found in my pantry, including mackerel, which made a fantastic crab substitute!
SO WHAT IS MACKEREL?
I only started eating mackerel this year and I'm thinking some of you may be mackerel virgins too. It's an oily fish that you can buy fresh or canned. I use the canned kind because that's what my grocery store has. I have yet to try fresh. While I don't like to include too many canned fish in my diet due to concerns of mercury, I do include canned salmon, sardines and mackerel in my diet for convenience and their health benefits at times.
MACKEREL CAN HELP LIFT OUR SPIRITS!
Mackerel is rich in omega-3 fatty acids which can help fight off depression. It's also high in B12 which also helps fight depression! So this really is a quarantine friendly dish! It's designed almost entirely from pantry ingredients and it contains nutrients that help boost our mood!
I scooped this into mason jars for work and enjoyed all week!

Soups have never been necessarily my go to, but due to the weather, being pantry friendly and something that is so comforting about soup making I'm finding myself craving soups during this quarantine time!
