MEDITERRANEAN CHICKPEA BURGER, SAFFRON MAYO, PICKLED VEGGIES, YUCCA BUN

This past weekend inspired by another video from Gordon Ramsay, I finally made real mayo!  It's actually super easy and healthy!  Designed with egg yolks which provide cognitive strengthening choline!
THE SECRET TO MAKING MAYO...
use room temperature eggs!  Actually I don't know if that is a secret but every time I tried making mayo before it didn't turn out and the only difference was the temperature of the eggs! 
I've been hooked on watching Gordon Ramsay's YouTube videos.  He has a cookery series which looks like it might have been a past course, and it is so educational!  He's not only a great chef, but also a great teacher.  He made this saffron garlic mayo that I had to give a spin.
It then inspired me to design two dishes, one being this guy!  I used one of my Mediterranean Chickpea Burgers that I froze a month ago as featured in my freezing video, as well as pickled red onions and cucumbers from my pickling video, proving all those produce preservation methods work! 
ANOTHER COOL THING...
The bun is made from yucca!  Yes this bun is designed solely from a vegetable!
