BUTTERNUT SQUASH IS USED AS A NATURALLY SWEET BUTTER TOPPING!
One of my favorite roots is butternut squash! It is soooo sweet! When you mash it up it has close to a cream cheese consistency so I thought why not use it as I would cream cheese?! At the same time of me roasting the butternut squash I was making this bread, so it just kinda worked. I do this a lot. I'll prep some foods and figure out how I can make them work in a dish together. Just like you do with your outfits!
I hesitate when I share a baked good dish because my baked goods don't taste anything like Betty Crockers but I guess what can you expect when you're not using standard ingredients, mixing with a blender, and conscientious of sugar content. Also, I don't do a ton of testing of baked goods. I'm usually the only one eating them as I live solo and I don't want to keep filling my stomach with baked goods no matter how healthy the recipe is. But I devoured this bread, especially when I added the toppings!

As I was putting the bread batter together I knew I would be topping with the sweet butternut squash, so I wanted a more neutral tasting bread. This allowed me to only use 1 tbsp of maple syrup for the whole loaf!
TIME SAVER DISH IDEA!
Make the butternut squash butter and spread it on your favorite healthy store bought bread! Toast it, spread the butternut squash butter on, and top with avocado slices! Would be so tasty and filling, with the added vegetable fiber and healthy fats. Plus all that beta carotene you'll give your body!
If you can't find plantains, you may be able to use ripe bananas. There is a chance you may just have to increase the almond flour by 1/4 cup. You may also not have to bake as long.
I also had some mixed berry chia jelly and apple pie filling on hand, so I added those too! I love the layer effect!
Later I topped a piece with homemade peanut butter and the mixed berry chia jelly. Tasted like a PB and J sandwich!
