Roasted Root Vegetable Salad with Caramalized Sweet Onion Dressing and Pumpkin Croutons


It's more important than ever for us to keep our immune systems strong this holiday season.  As if life isn't stressful enough during a pandemic, the holiday season seems to breed stress!  With no fun holiday parties even (well if you have regulations as we do in Maryland of no more than 10 people for an inside gathering) to help release some of the tension.  We have to play defense with our nutrition to help combat stress to help lesson our chances of getting sick.

I have lots of veggie centric side dish ideas for Thanksgiving that are clean and colorful!  This is one from last year.

Roasted veggies are fairly easy to prepare.  Chop your veggies, coat with extra virgin olive oil, sprinkle with salt and bake!  You can even cut the veggies the day before Thanksgiving and store in water to keep fresh!  Just make sure to air dry or blot dry with a towel before you bake.

Roasted veggies are fairly non unique to the Thanksgiving table, but when you add in the Caramelized Sweet Onion Dressing, that's what makes the impression!
