Spicy Thai Pomegranate Sweet Potato Edamame Soup

It's Friday night and I cannot believe I'm posting! By now my mind is so tired from thinking and intense focus from 5:30 am-10pm during the week, plus not stopping to recover on the wkds. I've been starting my days before work with a 2hr combo of movement and working on blog posts or the book, then I have work which I've been developing a new scheduling system for a few months on top of whatever I put on myself being at a family business. After work I go back to how I start my day with blog posts or the book plus some household work. My mind is toast at this almost Friday 8pm hour. But if I don't post this tonight it may never get posted as I'm already 10 deep on dishes that have yet to be posted and more than likely will design more this weekend. I have to share this one now as it's ballin' and I believe I have found....
THE PERFECT SOUP BASE COMBO!
I finally figured out the right combo for a filling mind friendly base for a soup.....1/2 vegetable broth 1/2 coconut milk. So flavorful and full of healthy fats for your mind!
A dish that provides mind nutrients plus it's a dish you can enjoy while typing away at work or walking the cold streets!
1. For the spice I chopped up dried red jalapeño peppers. I have a big bag that I store in my pantry. It's found in the international aisle usually hanging with other spices.
2. This soup is all plant based except the fish sauce. It does add a umami savory flavor but if not into it, don't use it!
Time for some Netflix....
