A simple dinner to make after work, although V day is on a Sunday this year! Salmon contains nutrients that help balance our hormones and encourage release of happy neurotransmitters which means it increases our libido! A tasty, simple meal that encourages love! Perfect Valentine Day feast!
I take you step by step!
Preheat oven for the sweet potato you'll serve on the side.
The sweet potato can cook while you freshen up! Poke sweet potato (s) with fork all over. Add to stoneware dish. Add to oven.
Heat pan for caramelized onion. Coat with extra virgin olive oil. Once hot add sliced onions and stir to coat with oil. Turn heat down to low. The onions will also cook as you freshen up!
Cook frozen green beans on the stove. You can also roast fresh asparagus.
Make the cayenne vinaigrette. Recipe below!
Brush salmon with a mixture of maple syrup and cayenne pepper. Sprinkle on kosher salt and cook in a hot pan.
Mix red leaf lettuce and green beans with vinaigrette.
Top with caramelized onion and salmon. Sprinkle on pomegranate arils!

CAYENNE VINAIGRETTE In a jar shake:
1/4 cup RED WINE VINEGAR
3/4 cup EXTRA VIRGIN OLIVE OIL
2 tsp PAPRIKA
2 tsp DIJON MUSTARD
2 tsp OREGANO
1/2 tsp CAYENNE
1/4 cup FRESH PARSLEY, chopped
